HPP is a cutting-edge method that’s miles ahead of traditional heat pasteurisation. It is also a very honest technology: there is nowhere to hide in terms of flavour notes, so you have to put the very best fruit in to get the best flavour. That is why we use hand-picked, single-orchard produce.
